“What a room! – a delightful space – where everything is satisfyingly well thought out and pleasing to the eye” (“reflecting the large amounts of money spent on them!”), at Caryn & Jerry Hibbert’s barn-conversion, which sits within a chocolate-box-pretty Cotswolds development, incorporating bar, pub, cookery school, spa and shopping. The food, in an easygoing vein, is “flavoursome” too – “we’d stay… if we didn't live around the corner”.

Caryn & Jerry Hibbert's “super-stylish and modern” barn-conversion is “surely one of the best restaurants in the Cotswolds” right now, and not only in terms of aesthetics… oldest son Charlie’s “tasty and light food focusing on interesting seasonal ingredients” is more than a match for the “great room and atmosphere”. The restaurant is a recent addition (c. 2020) to what amounts to Thyme's absurdly picturesque “village within a village” now spanning 31 bedrooms, a bar, pub, cookery school, spa and boutiques.

It’s part of Caryn & Jerry Hibbert’s ‘village within a village’ adjoining the “stunning village of Southrop”, recently described in The Times as “a Disney-perfect vision of the English countryside”: a collection of restored barns and other buildings that now form a complex of hotel, spa, pub, restaurant and events centre. "Oh dear! Such a stunning setting, such a beautiful room and such a terrible let-down. When you are expected to spend the sort of money charged here, you have the right to have high expectations. Is it too much to ask that your table is checked for lunch-time detritus before you arrive for the evening and have to ask for the floor to be swept? Have to ask for your coats to be taken? Should you expect to be shown every bottle of wine before it is poured? Be served your courses without having to be asked who is having what - every time? Perhaps if the chap who presumably was in charge had lifted his head from his screen and looked over his shoulder, he might have noticed all was not well. With about nineteen covers to serve, the kitchen was hardly pushed, but again it was so disappointing. The carpaccio & salsa rossa set the tone - from a cut of meat so sinewy and tough and served with such a tasteless mush as to be completely unappetising. To round off the dismal evening with a service charge of some sixty pounds was sub-optimal."
