This simple but well-designed spot opened just a few days before lockdown in March 2020, and changed into a Korean grocer for the duration, but it is now up and running again, serving fine dining European food with Korean ingredients and influences, from husband-and-wife team Woongchul Park (ex-The Ledbury) and Bomee Ki (previously pastry chef at The Arts Club). (‘Sollip’ is the Korean word for pine needles, which are used to control flames and smoke in traditional Korean cuisine.)

“Truly an epic fusion of Asian and French cooking techniques, flavours and produce” justify the trip to husband-and-wife Woongchul Park and Bomee Ki’s French/Korean passion project, in the grungy streets surrounding London Bridge and Guy’s Hospital (winner of the Top Gastronomic category at Harden’s London Restaurant Awards 2021). The “austere” interior can seem “clinical”, but fans feel that “every part is beautiful and considered like the food itself”. “You have to try the Insta-famous daikon tarte Tatin, but something even as humble as a cassoulet is raised to life-enriching memorableness here”.

“Who would have thought a French/Korean fusion of cuisines would be so successful?” This “tranquil and calm” (bordering on low-key) newcomer, in the unlovely environs of London Bridge, opened just a few days before lockdown in March 2020, and “deserves to do very well”. Behind it are husband-and-wife team Woongchul Park (ex-The Ledbury) and Bomee Ki (previously pastry chef at The Arts Club); their whimsical culinary approach – ‘haute’ European cuisine, but with subtle Korean influences and ingredients – wins utter raves: “a super-clean clash between French elegance and Korean ingredients using very original methods and executed beautifully”. “Every dish is like a love letter to your stomach… so pure, with pastry like a magic trick”. “I felt relaxed, curious, delighted… and departed light yet sated”. (‘Sollip’ is the Korean word for pine needles, which are used to control flames and smoke in traditional Korean cuisine.). Top Tip – “the Instagrammable daikon tarte Tatin is a savoury revelation, the gougeres moreish, but the deceptively simple cassoulet with kimchi you could feast on for the rest of days!”
