Revamped and relaunched in September 2022 under this new stand-alone identity, the flagship dining room at the Dorchester Collection’s 240 acre estate near Virginia Water still sits at the heart of the property and is still overseen by acclaimed chef, Adam Smith. It has been an open secret for years that the former design of the dining room didn’t do justice to the setting, which the new space created by Martin Hulbert Design aims to put right. There’s a new locally focused menu too. According to the press release: “inspiration from the idyllic landscape, will be woven [geddit? Ed] into the menus, and the dishes, whilst refined, will be presented in playful and contemporary ways”. Over the years, Adam Smith’s cuisine has been steadily acclaimed here in our diners’ poll – perhaps even more so in future? Top Tip – in the lounges, Adam also oversees “lovely afternoon tea: traditional and reasonably priced too compared to some hotels in central London!”
